Scientists of the department of food products technology made a pilot batch of fish sausages

     On September 23, 2016, a leading news portal of the fishing industry Fishnet.ru posted an article on innovative activities of the department of food products technology. The article focused on the technology for manufacturing fish raw cured sausage. This tasty and healthy product could be cheaper than meat sausage. This development will provide a basis for a thesis research of a postgraduate student Anna Shibeko. In this connection, it became necessary to produce a pilot batch of products.    

     Manufacturing facilities have been provided by the resource centre of the Technical school of industry-based technology (Svetlyy). The centre has all the necessary modern equipment for manufacturing of formed sausage products, and it is managed by the department graduate Yu.Mastyugin. In order to produce the pilot batch, they had to clean a box of carp. One of the know-how is that the sausage does not include natural fat. It is substituted with manmade fat. Using a special equipment, components were cut very small, salted, flavoured with spices and sent to formation.  The sausages will be dried, and after it there will be a degustation with experts in food products technology.
